Discover our wine making

Wine making is the process that consists in transforming the grape into wine. It is a delicate task that requires know-how, carefulness and rigor: the phase of vinification is of paramount importance to achieve high quality wines.

Pouilly Sur Loire

Pouilly sur Loire wine is issued from Chasselas blanc grape variety. The grape is harvested when the optimum of its ripening is reached. Its maturation is short in order to produce a fresh, light and fruity wine.

Pouilly Fumé

Pouilly Fumé wines are issued from Sauvignon banc grape variety. Our various terroirs allow us to offer a wide and rich aromatic pallet released by this single and unique grape variety.
The climate conditions will determine the vintage quality. The maturity of the grape must be at its peak before parcels are being harvested one by one.

The vinification starts first with a soft extraction of the juice led under a pneumatic press so as to optimise the quality of the must.
Each terroir is vinified separately in stainless steel tank and benefit from a careful follow-up and a rigorous monitoring.
White wines maturation on lees will last all winter long to enrich the juice and will continue on fine lees to enhance the subtlety of our Pouilly Fumé.

THE cuvées

Les cuvées are subject to a rigorous parcellar selection and handpicked.
Cuvée Prestige is matured in 228 litres oak casks for 10 months.
Cuvées Kalcaire and Kimmeridgian are matured in 400 litres oak casks for 12 months. The lees stirring will be carried out once a week throughout the maturation. This will put the lees back into suspension to enrich and refine the wines.
